Is It ‘Chocolate Cake Day’ Yet?

Are we the 27th of February yet? Does it mean that today is finally Chocolate Cake Day?  For us, Chocolate Cake Day comes with baking and baking means having wonderful smells in your kitchen all day long.

Today is a great opportunity to try this amazing homemade chocolate cake. I have recently done it when I had friends over on a Sunday afternoon and the first thing I was asked after having their first piece (because it didn’t stop at one piece obvisouly), was ‘can I have the recipe?’. For me, this is the best compliment I can ever get.

Have a look at this not only delicious, but also very easy recipe.

Ingredients:
* 2 large eggs
* 2 cups all-purpose flour
* 2 cups sugar
* 3/4 cup unsweetened cacao powder
* 2 tsp baking powder
* 1 1/2 tsp baking soda
* A pinch of salt
* 1 tsp espresso powder
* 2 tsp vanilla extract
* 1 cup of milk (can be almond milk or coconut milk as well)
* 1/2 cup vegetable oil or coconut oil
* 1 cup boiling water

Preparations:
1. Preheat oven to 250 degrees. Prepare two 9-inch cake pans by buttering them.
2. Add flour, sugar, cacao, baking powder, baking soda, salt and espresso powder to a large bowl. Mix through flour mixture.
3. Add eggs, milk, vanilla and vegetable oil to the flour mixture. Mix on medium speed. Reduce speed and carefully add the boiling water to the cake batter until well combined.
4. Distribute the cake batter evenly between the two cake pans. bake for 30-35 min.
5. Remove from oven and allow to cool for 10 min. Remove from the pan and let it cool completely.
6. Then you can frost the chocolate cake if you would like to.
