Canned Tomatoes

Canned tomatoes can be used in several different ways in the Italian kitchen. You can use it as a base in minestrone soup, or make it into a sauce with just a few extra ingredients.  The best kind of canned tomatoes to get are whole peeled tomatoes, which are believed to have more flavor than diced or crushed tomatoes.

Spices

Good food must be seasoned, and there are a few key players in Italian cooking: oregano, basil, thyme, dried rubbed sage, chili flakes, and bay leaves. These spices are the base of many sauces and soups and should be kept at all times.

Garlic

If you store garlic correctly, it can really last for a while. The shelf-life alone makes it a great ingredient to have on hand, and it is usually pretty inexpensive. Cooked in some olive oil with chili flakes and white wine and you have a simple sauce great on pasta.
