Are you trying to think of ways to beat the chilly winter blues? Few things beat cozying up to a bowl of hearty and scrumptious soup, especially this Japanese classic. Here’s your guide to whipping up a nourishing bowl of Miso soup in less than an hour.

Ingredients

  • 1/3 cup white miso
  • 3 tablespoons sliced scallions
  • 2 tablespoons dried wakame
  • 1 large piece kombu
  • 1 1/2 cups bonito flakes
  • 4 ounces of silken tofu

Instructions

  1. Place a large pot on the stove over a medium heat. Pour six cups of water and the kumbo into the pot, bringing the mixture to a simmer. Once the water simmers, remove the kumbo. Keep heating the stock until it boils and add bonito flakes, before lowering the flame to a medium-low heat. Cook until the stock is infused.
  2. Return the kombu to the pot and add the miso, stirring over a medium heat. Once the miso is dissolved, toss in scallions and wakame.
  3. Ready bowls for yourself and whoever else is joining you. Place tofu in each bowl before pouring the soup.
