This coffee and walnut cake is super delicious and very simple to make. You can use either instant coffee or make some with a cafetiere. The addition of walnuts adds a delicate flavor and an interesting texture and they are perfect to decorate the cake with. This sweet treat is perfect with an afternoon tea or coffee.
Ingredients
- 2 cups plain flour
- 1 cup brown sugar
- 1 teaspoon baking powder
- 7 oz salted butter
- 2 eggs
- ½ cup cooled coffee
- ½ cup chopped walnuts
For the icing
- ¼ cup cooled coffee
- 4 oz salted butter
- 1 cup icing sugar
- Halved walnuts for decoration
Instructions
- Preheat the oven to 340℉.
- Line a cake tin with greaseproof baking paper.
- In a large bowl, add the flour, sugar, and baking powder.
- Add the butter and mix together until smooth and even.
- Add the eggs and stir into the mixture.
- Add the coffee and the walnuts and mix throughout.
- Transfer the mixture to the lined cake tin and pop in the oven for 25-30 minutes.
- Check the cake is cooked through by sticking a knife in the middle and checking it doesn’t come out wet.
- Once cooked, transfer to a cooling rack and leave to cool.
- Meanwhile, make the icing.
- In a bowl, combine the coffee, butter, and icing sugar until smooth.
- Once the cake has cooled, spread the icing over it evenly.
- Decorate with halved walnuts.
