There is nothing like muffins right out of the oven. What is even better are these lavender lemon muffins! They are super aromatic, slightly floral, and have a punchy twist from the lemon zest. Ingredients
- 3/4 cup of sugar
- Two teaspoons of dried lavender buds
- One lemon
- 1/2 cup of softened butter
- Two eggs
- 1/2 cup of honey
- 1/2 cup of the non-dairy milk of your choice
- One teaspoon of vanilla
- 1 1/2 cups of flour
- 1/2 teaspoon of salt
- One teaspoon of baking powder
- 1/4 teaspoon of baking soda
Recipe
- Put the sugar, lavender, and the zest of the lemon into a food processor. Run until smooth. Take out 1/4 cup and leave it to the side.
- Take the remaining sugar mixture and cream it with the butter until fluffy. Add in the eggs and continue to beat.
- Pour in the honey, non-dairy milk, the juice from the lemon and vanilla extract and beat to combine.
- Fold in the flour, salt, baking soda, and baking powder into the wet ingredients until just combined.
- Fill up a muffin tin with the batter and bake for 20 minutes at 350 F.
