Most turkey dinners result in plenty of meat and other elements from the meal left over. Rather than letting these go to waste, put them to good use in this fantastic soup which is quick to make, tasty and full of healthy nutrients.
Ingredients (to serve 4):
- Leftover turkey meat, at least 1 cup
- 1 cup (or more) of roast potatoes
- 2 carrots
- 1 onion
- 1 cup of garden peas
- 1 stock cube
- 2 cups of water
- 1 tablespoon of oil
- 1 teaspoon of salt
- 1 tablespoon of cranberry sauce
Instructions:
- Heat the oil in a pan.
- Finely slice the onion and carrots and start frying them in the oil.
- Shred the turkey meat and add this to the pan.
- Cube the roast potatoes, add these to the pan.
- Add the water, stock cube, salt and peas and simmer for 15 minutes.
- Add the cranberry sauce, stir through well and serve.
