Mexican Stack-Up Recipe for a Fast Dinner

This dish layers all your favorite Mexican flavors into one hearty, customizable meal that’s perfect for a quick weeknight dinner or a fun meal with friends. Here’s how to whip up this tasty dish in no time.

Ingredients:

  • 1 pound ground beef or turkey
  • 1 packet of taco seasoning
  • 1 can of refried beans
  • Corn tortillas or tortilla chips
  • Shredded lettuce
  • Chopped tomatoes
  • Diced onions
  • Shredded cheese (cheddar, Monterey Jack, or a blend)
  • Sour cream
  • Sliced jalapeños (optional)
  • Salsa or hot sauce for topping

Instructions:

  1. In a skillet over medium heat, brown the ground meat until it’s fully cooked. Season with taco seasoning according to package instructions.
  2. Warm the refried beans in a separate pot or in the microwave. 
  3. Choose either corn tortillas or tortilla chips as your base. Both are delicious!
  4. Start with a layer of tortillas or chips. Next, spread a layer of warm refried beans, followed by the seasoned meat. Add layers of lettuce, tomatoes, onions, and cheese. Repeat the layers until the stack is as high as you’d like.
  5. Top your stack with dollops of sour cream, a sprinkle of sliced jalapeños, and a generous drizzle of salsa or hot sauce.
