Two Fresh, Unique Ways to Use Limes

Limes are a little neglected when it comes to the citrus fruit, with oranges and lemons claiming a lot of the attention. Put the green fruits front and center by using these recipes at home.

Lime And Pistachio Cake

Ingredients:

  • 1 cup self-raising flour
  • 1 tsp baking powder
  • ½ cup of caster sugar
  • ¾ cup of butter
  • ½ cup ground pistachios
  • 2 limes
  • 2 eggs

Instructions:

Begin by creaming the butter and sugar together. In a separate bowl, mix the flour with the baking powder and ground pistachios. Combine the mixes, and then whisk in the eggs. Zest one of the limes and add this to the mix, before juicing both limes and adding this to the cake batter. Pour into a lined cake tin, and at 350°F for 40 minutes. Test it by plunging a skewer into the center of the cake, if any wet batter clings to the skewer the cake needs another 5 minutes in the oven.

Once the cake is cooled, you can dust with icing sugar and the zest of the second lime for a pretty yet simple decoration.

Lime Pasta

Ingredients

  • 1 cup of dried pasta
  • 1 tin of anchovies
  • 2 limes
  • ¼ cup of raisins
  • ¼ cup of pine nuts
  • Olive oil
  • Salt

Instructions:

Cook the pasta according to packet instructions. Whilst the pasta is boiling, zest the limes and add this to a pan along with the anchovies, raisins and pine nuts. Season with a little salt and add ¼ cup of the pasta water to this mix, once the pasta is cooked. Stir the sauce through the pasta, and finish with a squeeze of fresh lime over each plate before serving.

Limes have a fantastic flavor and can offer up new options in the kitchen, so don’t forget about them when they’re sitting in the fruit bowl.
