Three Savory Pie Fillings To Please A Crowd

If you’re cooking for a gathering, pie is an excellent option – hearty, filling, and delicious. Whether you’ve made pastry from scratch or opted for shop-bought, check out these filling recipes to complete your pie.

Leek, Ham And Cheese

Ingredients

  • 1 leek
  • ½ cup of cream
  • ½ cup of hard cheese
  • 4 slices of ham
  • Oil

Instructions:

Fry the sliced leek in oil until it’s soft, then stir in the cream, grated cheese, and sliced ham. Cook through in the pan for a few minutes, before filling the pie. Bake in an oven for half an hour, until the pastry is golden brown on top.

Bean And Butternut Squash

Ingredients:

  • 1 butternut squash, peeled and deseeded
  • 1 can of beans (any type are fine)
  • 1 onion
  • 1 cup of vegetable stock
  • Oil

Instructions:

In an oven heated to 350°F, roast cubes of squash for half an hour, until softened and starting to brown. Heat oil in a pan and fry slices of onion until softened. Add the beans and the stock to the pan and simmer for ten minutes. Add the roasted squash, and then cook until most of the liquid has simmered off. Use to fill the pie and cook until the pastry is golden brown on top.

Blue Cheese And Onion

Ingredients:

  • 4 onions
  • ¼ cup of sugar
  • ½ cup of blue cheese
  • ½ cup of vegetable stock
  • Oil

Instructions:

Fry the onions in plenty of oil until they start to soften. Continue to fry them, letting them brown but not burn. Half an hour in, add the sugar to the pan and then cook for a further ten minutes to allow the onions to caramelize fully. Cut up the blue cheese and add into the pan, along with enough of the stock to create a sauce. Add the mix into the pastry, and bake until golden brown on top.
