Beetroot and Feta Filo Tart

Using ready-rolled pastry is a great hack for cooking. You can get some delicious results with minimal effort. This beetroot and feta tart is the ideal pairing of flavors and the red onion brings out the savory and sweetness of it all perfectly. This is delicious hot, but will be lovely cold too.

Ingredients 

(Serves 4-6)

  • 4-5 beets
  • 2 red onions 
  • 8 ounces feta cheese 
  • 9 ounces ready-rolled filo pastry
  • 1 tablespoon dried thyme
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350℉.
  2. Peel and chop the beetroot, and then the onion.
  3. Place the beetroot and onion into a baking tray and coat with the oil, thyme, salt and pepper.
  4. Bake for 20-30 minutes until soft.
  5. Meanwhile, remove the pastry from the fridge and unroll it.
  6. Line a baking tray with greaseproof paper and place the pastry into it.
  7. Pop the uncovered pastry in the oven for about 5 minutes to ensure the bottom and middle cooks. You can use baking beans if you have them.
  8. When the beetroot and onions are done, place them in an even layer on the pastry.
  9. Crumble the feta over and then pop this in the oven for about 10 minutes, until the pastry is cooked and the feta has melted.
  10. Serve immediately and enjoy!
