Since Mexican and Tex Mex food have become so popular, an unending argument as arisen – whether corn tortillas or flour tortillas reign supreme. Although both sides seem to be decided, in reality, each of them has their own special purposes. The most important thing is to buy really good quality tortillas no matter which one you’re buying.
Corn Tortillas
Corn tortillas are technically the more classic choice of the two. Corn tortillas were the only type of tortillas for most of history in Mexico. The dishes that really call for corn tortillas are things like pork tacos, the super popular as well as traditional tacos al pastor, and Baja fish tacos.
Flour Tortillas
Flour tortillas are much newer but definitely delicious and useful in their own ways. When you want to do something heavier but non-traditional like a breakfast burrito, a flour tortilla stands up more and has a better flavor. Tacos that are wetter that use a lot of sauce should be made with flour tortillas because the taco will break too easily in a corn tortilla. Things like marinated mushrooms or anything with a ton of salsa should be made with flour.
