Whether it’s money, time, or laziness, sometimes you have no choice but to do your grocery shopping at your local convenience store, bodega, or gas station. But does that mean you have to survive on soda and beef jerky? Not with these recipes.

Colorful One-Pan Bodega Stir-Fry

This recipe from Food 52 uses a variety of common convenience store foods for a recipe that’s actually pretty healthy. It’s more or less just some veggies, noodles, protein, and seaweed snacks for an umami, salty kick. Best of all, it’s just as easy to make as the ingredients are easy to source.

Rachel Wharton’s Bodega Beans

If you want to go even simpler, this recipe from Amateur Gourmet is pretty much impossible to go wrong with. It’s got plenty of protein and flavor, plus you can get these ingredients from pretty much anywhere on a very small budget. All it takes is beans, onion, garlic, oil, seasoning, and maybe some cheese for garnish. Fancy? Absolutely not. Still delicious? Absolutely.

Plantain & Mole Wraps

This recipe comes from The Bodega Cook Book and is described as “soft sautéed plantains and thick mole combine with caramelized onions, red cabbage, carrots, cucumber and bell peppers in a tortilla slathered with hummus.” Sounds pretty fantastic to us.
