One of the most difficult things to get right is the water temperature, especially if you don’t have a cooking thermometer.

That’s why using a lid is very important. When you heat water in a pot with a lid, you can control its temperature more easily. You’ll also be sure that the water is heated evenly and you won’t need to refill the pot as often. When uncovered, water evaporates faster, and when you add new water, it may not be the same temperature and compromise the cooking process.

For the best results, make sure the lid fits the pot, or use a universal lid if you don’t have a matching one!
