This tasty salad is super quick and easy to make and also delicious. The fresh salad combined with the soft couscous and salty feta is a match made in heaven. This recipe can be adapted to suit your tastes, such as using different herbs.
Ingredients
(Serves 2)
- 1x 15-oz canned chickpeas
- 1 cup dried couscous
- 8-10 cherry tomatoes
- ½ cucumber
- 1 cup olives
- 1 small red onion
- 1 tablespoon extra virgin olive oil
- Handful of mint leaves
- 1 veg stock cube
- 10 oz feta cheese
Instructions
- Place the dried couscous in a large bowl with the stock cube crumbled over
- Boil some water and pour it over the couscous until it’s just covering it all and give it a good stir – make sure the stock cube is well mixed in
- Leave to stand for 5-10 minutes
- Meanwhile, chop up the cucumber, tomatoes, and onion
- You can slice the olives in half or leave them whole depending on your preference
- When the couscous is ready, add the cucumber, tomatoes, onions, and olives to it and stir through
- Add the canned chickpeas, pour in the extra virgin olive oil, and tear in the mint leaves
- Season to taste with salt and pepper and give it a good stir
- Divide this into bowls, and serve with some crumbled feta
