Super Tasty Couscous Salad

This tasty salad is super quick and easy to make and also delicious. The fresh salad combined with the soft couscous and salty feta is a match made in heaven. This recipe can be adapted to suit your tastes, such as using different herbs.

Ingredients

(Serves 2)

  • 1x 15-oz canned chickpeas
  • 1 cup dried couscous
  • 8-10 cherry tomatoes
  • ½ cucumber
  • 1 cup olives
  • 1 small red onion
  • 1 tablespoon extra virgin olive oil
  • Handful of mint leaves
  • 1 veg stock cube
  • 10 oz feta cheese

Instructions

  1. Place the dried couscous in a large bowl with the stock cube crumbled over
  2. Boil some water and pour it over the couscous until it’s just covering it all and give it a good stir – make sure the stock cube is well mixed in
  3. Leave to stand for 5-10 minutes
  4. Meanwhile, chop up the cucumber, tomatoes, and onion
  5. You can slice the olives in half or leave them whole depending on your preference
  6. When the couscous is ready, add the cucumber, tomatoes, onions, and olives to it and stir through
  7. Add the canned chickpeas, pour in the extra virgin olive oil, and tear in the mint leaves
  8. Season to taste with salt and pepper and give it a good stir
  9. Divide this into bowls, and serve with some crumbled feta
