Sausage casserole is a hearty and comforting dish that will bring you much comfort and joy over the cold winter months. This recipe uses red lentils and vegetarian sausages as a healthy vegetarian alternative that you will love. Here is how to make it.

Ingredients

  • 10 ounces of red lentils
  • 1 tin of chopped tomatoes
  • 4 medium tomatoes
  • 4 vegetarian sausages
  • 1 white onion
  • 4 cloves of garlic
  • 3 cups of water
  • 1 teaspoon of smoked paprika
  • 1 tablespoon of olive oil
  • 1 stock cube
  • Salt
  • Black pepper

Instructions

  1. Chop your onion and add to a large saucepan with your olive oil. Cook for 5-10 minutes until soft and then add your garlic and tomatoes. Let them cook for about 5 minutes before adding your tin of tomatoes. Add your lentils at this point, and make sure they have enough water to cover them.
  2. Let your lentils cook in the tomato sauce for about 15 minutes, adding more water each time they start to dry up. At this point, add your smoked paprika and a generous pinch of salt. If you wish, you can also add a vegetable stock cube at this point.
  3. Whilst your lentils are cooking, chop up your vegetarian sausages and fry them in a frying pan for about 10 minutes, until brown on the outside. When they are done, you can add them to your casserole so their flavor seeps into your sauce.
  4. Once your lentils and sausages are cooked, taste your casserole and add black pepper and salt to taste. This dish goes well with quinoa or rice, and you can have it with mashed potato. Greens that work well with this dish would be kale or tenderstem broccoli.

Casseroles are a hearty and easy dish that anyone can learn to prepare, and the best thing about them is that they are extremely customizable. Even if you’ve already mastered a few casserole recipes, there’s always room for improvement so check out these easy tips that will help you prepare even better casseroles in the future.

Don’t Avoid Toppings

Just because they will add more calories to this dish doesn’t mean you should skimp on toppings. Adding nuts, cheese, herbs, breadcrumbs, or crackers on top of your casserole will make this cozy dish more flavorful and crunchy.

Drain The Meat

When adding cooked chicken, turkey, or beef, don’t forget to remove all excess water in order to avoid a soggy casserole.

Use Leftovers

A casserole is a versatile dish that can be prepared with literally any ingredient that you love. This means that you should always put those leftovers in your fridge to some good use and make delicious casseroles with them.

Avoid Frozen Veggies

Using frozen veggies is of course okay if it’s winter or you have some in the freezer, but it’s always best to make casseroles with fresh veggies because they will definitely taste better.

A creamy and delicious casserole is probably one of the best dinner recipes because it’s quick and easy to prepare. Choosing the perfect topping for a casserole is the best way to take this dish to a whole new level. Check out a few great toppings that will add crunch to your casseroles.

Cereal

Topping your favorite casserole with cereal probably sounds like a weird and bad idea, but it’s not! The cereal will add a touch of sweetness to this dish and it’ll definitely make it super crunchy and enjoyable.

Breadcrumbs

Sprinkle breadcrumbs on top of your casserole only when it’s done cooking, and put it back in the oven and cook until the breadcrumbs are golden brown. To add more flavor and take this dish to another level you can always mix breadcrumbs with some olive oil and garlic.

Nuts

Nuts are always the best and most delicious choice when it comes to making dishes crunchy. Sprinkling some chopped walnuts, almonds, or cashews on top of your casserole will add a nice nutty flavor and crunchy texture to this dish.

Crackers

Much like breadcrumbs, delicious buttery crackers like Ritz Crackers will also take your casseroles to a whole new level and make them crunchy.
