This Vegetarian Sausage Casserole is the Perfect Winter Dish

Sausage casserole is a hearty and comforting dish that will bring you much comfort and joy over the cold winter months. This recipe uses red lentils and vegetarian sausages as a healthy vegetarian alternative that you will love. Here is how to make it.

Ingredients

  • 10 ounces of red lentils
  • 1 tin of chopped tomatoes
  • 4 medium tomatoes
  • 4 vegetarian sausages
  • 1 white onion
  • 4 cloves of garlic
  • 3 cups of water
  • 1 teaspoon of smoked paprika
  • 1 tablespoon of olive oil
  • 1 stock cube
  • Salt
  • Black pepper

Instructions

  1. Chop your onion and add to a large saucepan with your olive oil. Cook for 5-10 minutes until soft and then add your garlic and tomatoes. Let them cook for about 5 minutes before adding your tin of tomatoes. Add your lentils at this point, and make sure they have enough water to cover them.
  2. Let your lentils cook in the tomato sauce for about 15 minutes, adding more water each time they start to dry up. At this point, add your smoked paprika and a generous pinch of salt. If you wish, you can also add a vegetable stock cube at this point.
  3. Whilst your lentils are cooking, chop up your vegetarian sausages and fry them in a frying pan for about 10 minutes, until brown on the outside. When they are done, you can add them to your casserole so their flavor seeps into your sauce.
  4. Once your lentils and sausages are cooked, taste your casserole and add black pepper and salt to taste. This dish goes well with quinoa or rice, and you can have it with mashed potato. Greens that work well with this dish would be kale or tenderstem broccoli.
