Profiteroles, or chocolate eclairs, are delicious balls of soft choux pastry filled with delectable and smooth chocolate sauce. They are relatively easy to make but will impress anyone who tries them. Here’s how to make them.

Ingredients:

  • 1/2 cup of water
  • 1/4 cup of unsalted butter
  • 1/4 teaspoon salt
  • 1/2 cup of all-purpose flour
  • 2 large eggs
  • 1 cup of heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup of heavy cream
  • 4 ounces of chocolate, chopped
  • 1 tablespoon unsalted butter

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. In a saucepan, combine the water, unsalted butter, and salt. Bring to a boil over medium heat.
  2. Reduce the heat to low and add the flour all at once. Stir vigorously until the mixture forms a smooth ball and pulls away from the sides of the pan. Transfer the dough to a mixing bowl and let it cool slightly.
  3. Add the eggs, one at a time, to the dough, beating well after each addition, until the dough is smooth and glossy.
  4. Transfer the dough to a piping bag fitted with a large round tip (or simply use a spoon) and pipe small mounds onto the prepared baking sheet, leaving space between each mound for expansion.
  5. Bake the choux pastry in the preheated oven for 20-25 minutes, or until golden brown and puffed up. Remove from the oven and let cool completely on a wire rack. While the pastry is cooling, prepare the filling. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  6. Once the pastry has cooled, use a sharp knife to slice each profiterole in half horizontally. Spoon or pipe the whipped cream filling into the bottom half of each profiterole and then place the top half back on.
  7. To make the chocolate sauce, heat the heavy cream in a small saucepan until it begins to simmer. Remove from heat and add the chopped chocolate and unsalted butter. Stir until smooth and glossy. Drizzle the chocolate sauce over the filled profiteroles or serve it on the side for dipping.

Tiffin is one of the tastiest, most indulgent chocolatey treats but is so easy to make. It’s also really simple to make it entirely vegan, so if you want a dairy-free chocolate sweet treat then this recipe is perfect. Always double-check that dark chocolate and plain cookies or crackers are vegan. These tiffin bars will keep in the fridge for up to one week after making them.

Ingredients:

(Serves 12)

  • 10 ounces dark chocolate
  • 8 ounces plain cookies or crackers
  • 1 cup raisins
  • ¼ cup coconut oil 
  • ¼ cup maple syrup

Instructions:

  1. Smash the crackers up into small pieces and place them into a large bowl.
  2. Break the chocolate into pieces and place in a heatproof bowl.
  3. Place the bowl over a pan of bubbling water on the stove.
  4. Add the coconut oil and maple syrup to the chocolate and gently stir over the hot water until they are completely melted.
  5. Pour this mixture into the bowl with the crackers in and then add the raisins.
  6. Give it all a good stir until thoroughly mixed.
  7. Line a baking tray with greaseproof paper.
  8. Transfer the mixture to the baking tray and spread out into an even layer.
  9. Leave to cool completely, and then place in the fridge for 2-3 hours.
  10. Remove from the fridge and slice into 12 bars.

  • 3 large egg yolks

Instructions

  1. In a saucepan, combine water, milk, butter, sugar, and salt. Bring to a boil over medium heat. Reduce heat to low and add flour all at once. Stir vigorously until the mixture forms a smooth ball and pulls away from the sides of the pan. Transfer the mixture to a mixing bowl and let it cool for 5 minutes.Add eggs one at a time, beating well after each addition, until the dough is smooth and glossy.
  2. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Once the eclairs are completely cooled, use a sharp knife to make a small slit along one side of each eclair. Transfer the chilled pastry cream to a piping bag fitted with a small round tip. Pipe the cream into the eclairs through the slit until filled.
  3. In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chopped chocolate. Let it sit for 1-2 minutes, then stir until smooth and glossy. Dip the top of each filled eclair into the chocolate ganache, allowing any excess to drip off. Place the eclairs on a wire rack set over a baking sheet to catch any drips. Let the ganache set at room temperature for 10-15 minutes.
  4. Once the chocolate ganache is set, transfer the eclairs to a serving platter.   3. Add the eggs, one at a time, to the dough, beating well after each addition, until the dough is smooth and glossy.
  4. Transfer the dough to a piping bag fitted with a large round tip (or simply use a spoon) and pipe small mounds onto the prepared baking sheet, leaving space between each mound for expansion.
  5. Bake the choux pastry in the preheated oven for 20-25 minutes, or until golden brown and puffed up. Remove from the oven and let cool completely on a wire rack. While the pastry is cooling, prepare the filling. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Tiffin is one of the tastiest, most indulgent chocolatey treats but is so easy to make. It’s also really simple to make it entirely vegan, so if you want a dairy-free chocolate sweet treat then this recipe is perfect. Always double-check that dark chocolate and plain cookies or crackers are vegan. These tiffin bars will keep in the fridge for up to one week after making them.

Ingredients:

(Serves 12)

  • 10 ounces dark chocolate
  • 8 ounces plain cookies or crackers
  • 1 cup raisins
  • ¼ cup coconut oil 
  • ¼ cup maple syrup

Instructions:

  1. Smash the crackers up into small pieces and place them into a large bowl.
  2. Break the chocolate into pieces and place in a heatproof bowl.
  3. Place the bowl over a pan of bubbling water on the stove.
  4. Add the coconut oil and maple syrup to the chocolate and gently stir over the hot water until they are completely melted.
  5. Pour this mixture into the bowl with the crackers in and then add the raisins.
  6. Give it all a good stir until thoroughly mixed.
  7. Line a baking tray with greaseproof paper.
  8. Transfer the mixture to the baking tray and spread out into an even layer.
  9. Leave to cool completely, and then place in the fridge for 2-3 hours.
  10. Remove from the fridge and slice into 12 bars.

Instructions:

  1. Melt the chocolate in the microwave.
  2. Whisk together the melted chocolate, oil, and chocolate spread.
  3. Stir in the nuts and maple syrup. Spread out onto a tray so the mix is just under 1 inch thick.
  4. Place in the fridge for half an hour to cool and set.
  5. Slice into bars or squares, these will store in a container in the fridge for up to 2 weeks.

Indulge your sweet tooth with these delightful homemade chocolate eclairs. Crisp choux pastry filled with creamy pastry cream and topped with rich chocolate ganache, these decadent treats are sure to impress and satisfy your dessert cravings.

Ingredients

  • 1/2 cup of water
  • 1/2 cup of whole milk
  • 1/2 cup of unsalted butter
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 cup of all-purpose flour
  • 4 large eggs
  • 1 cup of whole milk
  • 3 large egg yolks
  • 1/4 cup of granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup of heavy cream
  • 4 ounces of semisweet chocolate

Instructions

  1. In a saucepan, combine water, milk, butter, sugar, and salt. Bring to a boil over medium heat. Reduce heat to low and add flour all at once. Stir vigorously until the mixture forms a smooth ball and pulls away from the sides of the pan. Transfer the mixture to a mixing bowl and let it cool for 5 minutes.Add eggs one at a time, beating well after each addition, until the dough is smooth and glossy.
  2. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Once the eclairs are completely cooled, use a sharp knife to make a small slit along one side of each eclair. Transfer the chilled pastry cream to a piping bag fitted with a small round tip. Pipe the cream into the eclairs through the slit until filled.
  3. In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chopped chocolate. Let it sit for 1-2 minutes, then stir until smooth and glossy. Dip the top of each filled eclair into the chocolate ganache, allowing any excess to drip off. Place the eclairs on a wire rack set over a baking sheet to catch any drips. Let the ganache set at room temperature for 10-15 minutes.
  4. Once the chocolate ganache is set, transfer the eclairs to a serving platter. Serve immediately and enjoy the irresistible combination of crisp pastry, creamy filling, and rich chocolate ganache. Transfer the choux pastry dough to a piping bag fitted with a large round tip. Pipe 4-inch long strips onto the prepared baking sheet, leaving space between each eclair.
  5. Bake for 15 minutes, then reduce the oven temperature to 350°F (180°C) and bake for an additional 20-25 minutes, or until the eclairs are golden brown and puffed. Transfer to a wire rack to cool completely. In a saucepan, heat milk until steaming but not boiling. In a separate bowl, whisk together egg yolks, sugar, and cornstarch until smooth.
  6. Gradually whisk the hot milk into the egg mixture. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.
