From cookies to cupcakes and everything in between, buttercream is a staple used to add richness and decoration to all kinds of baked goods. Its velvety texture and Goldilocks-just-right level of sweetness make it the perfect blank canvas for almost any flavor imaginable, and its creamy consistency makes it as easy to work with as it is to prepare. Read on for our go-to recipe.

Ingredients:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 teaspoon salt
  • 1-2 teaspoons pure vanilla extract (or other flavor extracts of your choice)
  • 2-4 tablespoons milk (adjust as needed for consistency)
  • Food coloring

Instructions:

  1. In a large mixing bowl, use an electric mixer to beat the softened butter until creamy.
  2. Add the confectioners’ sugar one cup at a time, beating well after each addition. 
  3. Mix in the salt and your preferred flavoring. You can experiment with other extracts like almond, lemon, or even add a tablespoon of cocoa powder to make a chocolate buttercream.
  4. If the frosting is too thick, add 1-2 tablespoons of heavy cream or milk and continue beating until you reach your desired consistency. If it’s too thin, add more powdered sugar.
  5. Taste and adjust the flavor or sweetness by adding more flavor extract or confectioners’ sugar if needed.
  6. Beat the frosting on medium-high for 2-3 minutes until it becomes light, fluffy, and well combined.
  7. If you’d like to make colored frosting, add your food coloring one drop at a time and stir with a spatula until the color is fully incorporated. Keep going until you reach your desired shade, keeping in mind that most food dyes tend to darken slightly over time. 
  8. Use the buttercream immediately to frost cakes, cupcakes, or cookies. Alternatively, you can store it in an airtight container in the refrigerator for a short period, but allow it to come to room temperature and re-whip before using.

If you’ve ever had a sudden craving for a sweet treat, you’ll know how disappointing it can be when you open the cookie jar or cake tin, only to find it empty. While store-bought treats are always an option, these banana cookies are so easy to whip up, it may actually be quicker to make them than to make your way out to the store! They are also healthier than your average cookie, as they are partly sweetened with banana and contain plenty of protein and healthy fats in the form of peanut butter.

Ingredients (Batch of 12 cookies):

  • 2 ripe bananas
  • 2 tablespoons of peanut butter
  • 3/4 cup and 2 tablespoons of porridge oats
  • 3/4 cup of unsalted butter
  • 1/2 teaspoon of cinnamon
  • 2 tablespoons of dark chocolate chips

Instructions:

  1. Preheat the oven to 390 °F. Line a baking tray with parchment paper.
  2. In a large mixing bowl, mash the bananas until smooth.
  3. Melt the butter in a pan or microwave and then pour over the bananas, mixing well.
  4. Pulse the oats in a food blender so that they are finer and easier to mix in. Add these to the banana and butter mix and stir well to combine.
  5. Stir in the peanut butter, cinnamon, and chocolate chips.
  6. The mix will be quite wet, so lightly flour a surface before rolling out the cookie dough.
  7. Cut the cookies into shapes and place them on the baking tray.
  8. Bake for 10 – 15 minutes, and allow to cool for at least 15 minutes once you remove them from the oven.

Homemade cookies are unparalleled in their deliciousness. There are so many ways to make them and exciting flavor variations to try. This recipe uses desiccated coconut and dried cranberries for a super sweet, indulgent, and satisfying cookie. Once cooled these cookies can be stored in an airtight container for up to 1 week. 

Ingredients:

(Makes 12 cookies)

  • 2 cups plain flour
  • 1 cup caster sugar
  • 3 eggs
  • ¼ cup butter
  • 1 teaspoon bicarbonate of soda
  • 1 cup desiccated coconut
  • 1 cup dried cranberries

Instructions:

  1. Preheat oven to 360℉.
  2. Sift the flour and bicarbonate of soda into a large mixing bowl.
  3. Add the sugar and the butter and mix until completely combined.
  4. Crack the eggs into the bowl and beat into the mixture.
  5. Add the desiccated coconut and dried cranberries and mix until evenly spread. 
  6. Line a large baking tray with greaseproof paper.
  7. Using your hands divide the mixture into evenly sized balls until you have 12.
  8. Place them on the baking tray ensuring they have enough space to spread.
  9. Place in the oven for 15-18 minutes, ensuring they’re cooked all the way through.
  10. Transfer to a cooling rack and leave to cool for 10 minutes before enjoying.

  6. Add the raisins and stir, ensuring everything is well mixed. 
  7. Line a baking tray with greaseproof paper.
  8. Using your hands, divide the mixture into 12 evenly-sized balls.
  9. Place them on the lined baking tray ensuring they each have enough space around them to spread. 
  10. Place in the oven for 10-12 minutes, until they are solid and slightly crispy.
  11. Leave to stand for 5 minutes and then enjoy warm with a cup of tea or glass of milk.
  12. Once cooled, transfer to an airtight container and store for up to 1 week.

Baking soda is an important ingredient in any baking recipe. It helps the dough rise and makes your cookies (or anything else you’re baking) fluffy and soft. If you’ve ever forgotten to add baking soda, you know how flat and dense the cookies are without it. But what can you do if you put too much of it?

Although baking soda is necessary when baking, adding more of it doesn’t mean you’ll get better cookies. In fact, too much baking soda will make your cookies lose flavor and texture. Baking soda works by releasing carbon dioxide when mixed with liquid and getting the right amount is crucial.

If you put too much of it in the dough, don’t panic. First, see if you can take some of it out. If you’ve already mixed it with the other ingredients, perhaps you can adjust the amount of everything and just make more? This works if you know how much you’ve added, for example, one extra teaspoon or one tablespoon instead of a teaspoon.

If the dough has been mixed, you don’t know how much baking soda is in it or if your cookies are already baking, there’s not much you can do. Decide if you want to throw everything right away or try baking them anyway. If they don’t turn out right, start from scratch.

What’s better than a chocolate chip cookie? A cookie with chocolate on the inside, too! Check out these adorable little cookies, which are filled with a hazelnut chocolate cream center. Utterly delicious and hard to resist, these won’t last long in most households.

Chocolate Filled Cookies

Ingredients (to make 12):

  • 1 cup of plain flour
  • 1/4 cup of rolled oats
  • 3/4 cup of unsalted butter
  • 3/4 cup of caster sugar
  • 2 tablespoons of cocoa powder
  • 1/4 cup of milk
  • 2 eggs
  • 4 tablespoons of hazelnut chocolate spread

Instructions:

  1. In a large mixing bowl, sift the flour and sugar together.
  2. Rub in the butter, using your fingertips if necessary, to create a breadcrumb like texture.
  3. Stir in the oats and cocoa powder.
  4. Whisk in the eggs and milk.
  5. Knead into a dough and roll out. Cut the cookies out and bake in the center of a pre-heated oven for 5 minutes at 330 degrees.
  6. Remove from the oven, press into the center of each cookie (wearing a glove as the cookies will be hot). Spoon a teaspoon of the chocolate spread into the dimple, then return to the oven and bake for another 10 minutes.
  7. Allow the cookies to cool before serving.

These cookies don’t take long to make, but you can guarantee they will disappear in the blink of an eye!

A Japanese artist who goes by the name Kiri0izm creates these wonderful 3D cookies. Her creative style was inspired by anime, a Japanese type of animation. The result is beautiful and unique, so much so that when you browse through her work, it’s easy to assume you’re looking at some kind of digital art. But it’s actually just cookies, believe it or not!

The characters she picks come from many popular animes like JoJo’s Bizarre Adventure, Mob Psycho 100, Hypnosis Mic, and more. It’s easy to appreciate her artwork because the level of skill and talent like her’s isn’t so common. All the details you see in the photos are created with sugar icing. The characters are portrayed authentically and every anime fan will appreciate them.

Fans are mostly impressed by the level of detail in these cookies. “Wow, I would be curious to know how much time was spent molding the hair alone. If you’ve ever had a sudden craving for a sweet treat, you’ll know how disappointing it can be when you open the cookie jar or cake tin, only to find it empty. While store-bought treats are always an option, these banana cookies are so easy to whip up, it may actually be quicker to make them than to make your way out to the store! They are also healthier than your average cookie, as they are partly sweetened with banana and contain plenty of protein and healthy fats in the form of peanut butter.

Ingredients (Batch of 12 cookies):

  • 2 ripe bananas
  • 2 tablespoons of peanut butter
  • 3/4 cup and 2 tablespoons of porridge oats
  • 3/4 cup of unsalted butter
  • 1/2 teaspoon of cinnamon
  • 2 tablespoons of dark chocolate chips

Instructions:

  1. Preheat the oven to 390 °F. Line a baking tray with parchment paper.
  2. In a large mixing bowl, mash the bananas until smooth.
  3. Melt the butter in a pan or microwave and then pour over the bananas, mixing well.
  4. Pulse the oats in a food blender so that they are finer and easier to mix in. Add these to the banana and butter mix and stir well to combine.
  5. Stir in the peanut butter, cinnamon, and chocolate chips.
  6. The mix will be quite wet, so lightly flour a surface before rolling out the cookie dough.
  7. Cut the cookies into shapes and place them on the baking tray.
  8. Bake for 10 – 15 minutes, and allow to cool for at least 15 minutes once you remove them from the oven.

St. Patrick’s Day is just around the corner, and even if you’re not Irish, it can still be a great opportunity to engage in some festive baking. Irish Potato Candy

Don’t let the name fool you—these candies are not really Irish, and don’t contain any potato, but they are delicious, and that’s good enough for us. Brooklyn Farm Girl pays tribute to one of Ireland’s most important crops by shaping a mixture of cream cheese, coconut, and powdered sugar into bite-sized candy “spuds” before rolling them in cinnamon to create the “peel.”

Lucky Charms Frosted Sugar Cookies

Give your sugar cookies a seasonal spin with this recipe by Jenna from Butternut Bakery. Starting with soft and fluffy bakery-style cookies, she adds a rich layer of homemade vanilla buttercream before topping it all off with a handful of Lucky Charms cereal. Nostalgic, festive, and magically delicious.

Baileys Irish Cream Chocolate Pudding

Baileys is a cream-based whiskey liquor that has been produced in Ireland since the 1970s. Its sweet, chocolatey flavor makes it a great addition to coffee or other alcoholic cocktails, but for St. Patty’s Day, we love it in this pudding pie by Baker by Nature. Enjoy it on its own, or as dessert after a traditional Irish meal of corned beef and cabbage.

Homemade cookies are unparalleled in their deliciousness. There are so many ways to make them and exciting flavor variations to try. This recipe uses desiccated coconut and dried cranberries for a super sweet, indulgent, and satisfying cookie. Once cooled these cookies can be stored in an airtight container for up to 1 week. 

Ingredients:

(Makes 12 cookies)

  • 2 cups plain flour
  • 1 cup caster sugar
  • 3 eggs
  • ¼ cup butter
  • 1 teaspoon bicarbonate of soda
  • 1 cup desiccated coconut
  • 1 cup dried cranberries

Instructions:

  1. Preheat oven to 360℉.
  2. Sift the flour and bicarbonate of soda into a large mixing bowl.
  3. Add the sugar and the butter and mix until completely combined.
  4. Crack the eggs into the bowl and beat into the mixture.
  5. Add the desiccated coconut and dried cranberries and mix until evenly spread. 
  6. Line a large baking tray with greaseproof paper.
  7. Using your hands divide the mixture into evenly sized balls until you have 12.
  8. Place them on the baking tray ensuring they have enough space to spread.
  9. Place in the oven for 15-18 minutes, ensuring they’re cooked all the way through.
  10. Transfer to a cooling rack and leave to cool for 10 minutes before enjoying.

These cookies are so simple to make yet super satisfying. They have very few ingredients and can be whipped up in no time at all.   • 1 cup raisins 
  • ¼ cup butter 
  • 2 eggs

Instructions

  1. Preheat the oven to 350℉
  2. Warm the butter so it becomes soft.
  3. Add the oats, sugar, and butter to a large bowl and mix together.
  4. Crack the eggs into a small bowl and beat until smooth.
  5. Add the eggs to the mixture and stir through.
  6. Add the raisins and stir, ensuring everything is well mixed. 
  7. Line a baking tray with greaseproof paper.
  8. Using your hands, divide the mixture into 12 evenly-sized balls.
  9. Place them on the lined baking tray ensuring they each have enough space around them to spread. 
  10. Place in the oven for 10-12 minutes, until they are solid and slightly crispy.
  11. Leave to stand for 5 minutes and then enjoy warm with a cup of tea or glass of milk.
  12. Once cooled, transfer to an airtight container and store for up to 1 week.

Baking soda is an important ingredient in any baking recipe. It helps the dough rise and makes your cookies (or anything else you’re baking) fluffy and soft. If you’ve ever forgotten to add baking soda, you know how flat and dense the cookies are without it. But what can you do if you put too much of it?

Although baking soda is necessary when baking, adding more of it doesn’t mean you’ll get better cookies. In fact, too much baking soda will make your cookies lose flavor and texture. Baking soda works by releasing carbon dioxide when mixed with liquid and getting the right amount is crucial.

If you put too much of it in the dough, don’t panic. First, see if you can take some of it out. If you’ve already mixed it with the other ingredients, perhaps you can adjust the amount of everything and just make more? This works if you know how much you’ve added, for example, one extra teaspoon or one tablespoon instead of a teaspoon.

If the dough has been mixed, you don’t know how much baking soda is in it or if your cookies are already baking, there’s not much you can do. Decide if you want to throw everything right away or try baking them anyway. If they don’t turn out right, start from scratch.

What’s better than a chocolate chip cookie? A cookie with chocolate on the inside, too! Check out these adorable little cookies, which are filled with a hazelnut chocolate cream center. Utterly delicious and hard to resist, these won’t last long in most households.

Chocolate Filled Cookies

Ingredients (to make 12):

  • 1 cup of plain flour
  • 1/4 cup of rolled oats
  • 3/4 cup of unsalted butter
  • 3/4 cup of caster sugar
  • 2 tablespoons of cocoa powder
  • 1/4 cup of milk
  • 2 eggs
  • 4 tablespoons of hazelnut chocolate spread

Instructions:

  1. In a large mixing bowl, sift the flour and sugar together.
  2. Rub in the butter, using your fingertips if necessary, to create a breadcrumb like texture.
  3. Stir in the oats and cocoa powder.
  4. Whisk in the eggs and milk.
  5. Knead into a dough and roll out. Cut the cookies out and bake in the center of a pre-heated oven for 5 minutes at 330 degrees.
  6. Remove from the oven, press into the center of each cookie (wearing a glove as the cookies will be hot). Spoon a teaspoon of the chocolate spread into the dimple, then return to the oven and bake for another 10 minutes.
  7. Allow the cookies to cool before serving.

These cookies don’t take long to make, but you can guarantee they will disappear in the blink of an eye!

A Japanese artist who goes by the name Kiri0izm creates these wonderful 3D cookies. Her creative style was inspired by anime, a Japanese type of animation. The result is beautiful and unique, so much so that when you browse through her work, it’s easy to assume you’re looking at some kind of digital art. But it’s actually just cookies, believe it or not!

The characters she picks come from many popular animes like JoJo’s Bizarre Adventure, Mob Psycho 100, Hypnosis Mic, and more. It’s easy to appreciate her artwork because the level of skill and talent like her’s isn’t so common. All the details you see in the photos are created with sugar icing. The characters are portrayed authentically and every anime fan will appreciate them.

Fans are mostly impressed by the level of detail in these cookies. “Wow, I would be curious to know how much time was spent molding the hair alone. It would be fascinating to see a video of the baker/artist’s process,” one follower wrote. She just started sharing the process on Youtube, so that wish has been granted!
