These Banana Cookies Are So Easy To Make

If you’ve ever had a sudden craving for a sweet treat, you’ll know how disappointing it can be when you open the cookie jar or cake tin, only to find it empty. While store-bought treats are always an option, these banana cookies are so easy to whip up, it may actually be quicker to make them than to make your way out to the store! They are also healthier than your average cookie, as they are partly sweetened with banana and contain plenty of protein and healthy fats in the form of peanut butter.

Ingredients (Batch of 12 cookies):

  • 2 ripe bananas
  • 2 tablespoons of peanut butter
  • 3/4 cup and 2 tablespoons of porridge oats
  • 3/4 cup of unsalted butter
  • 1/2 teaspoon of cinnamon
  • 2 tablespoons of dark chocolate chips

Instructions:

  1. Preheat the oven to 390 °F. Line a baking tray with parchment paper.
  2. In a large mixing bowl, mash the bananas until smooth.
  3. Melt the butter in a pan or microwave and then pour over the bananas, mixing well.
  4. Pulse the oats in a food blender so that they are finer and easier to mix in. Add these to the banana and butter mix and stir well to combine.
  5. Stir in the peanut butter, cinnamon, and chocolate chips.
  6. The mix will be quite wet, so lightly flour a surface before rolling out the cookie dough.
  7. Cut the cookies into shapes and place them on the baking tray.
  8. Bake for 10 – 15 minutes, and allow to cool for at least 15 minutes once you remove them from the oven.
