The Ultimate Raisin Oatmeal Cookies

These cookies are so simple to make yet super satisfying. They have very few ingredients and can be whipped up in no time at all. These taste delicious but are quite healthy so they will work perfectly as a light breakfast or an afternoon snack. You can adapt this recipe easily by adding extras of your choice, such as chocolate chips or desiccated coconut.

Ingredients 

(Makes 12 cookies)

  • 2 cups oats 
  • 1 cup demerara sugar
  • 1 cup raisins 
  • ¼ cup butter 
  • 2 eggs

Instructions

  1. Preheat the oven to 350℉
  2. Warm the butter so it becomes soft.
  3. Add the oats, sugar, and butter to a large bowl and mix together.
  4. Crack the eggs into a small bowl and beat until smooth.
  5. Add the eggs to the mixture and stir through.
  6. Add the raisins and stir, ensuring everything is well mixed. 
  7. Line a baking tray with greaseproof paper.
  8. Using your hands, divide the mixture into 12 evenly-sized balls.
  9. Place them on the lined baking tray ensuring they each have enough space around them to spread. 
  10. Place in the oven for 10-12 minutes, until they are solid and slightly crispy.
  11. Leave to stand for 5 minutes and then enjoy warm with a cup of tea or glass of milk.
  12. Once cooled, transfer to an airtight container and store for up to 1 week.
