Room Temperature Ingredients

Make sure that all your ingredients are at room temperature before you start baking. Ingredients like butter, eggs, and milk blend together more easily when they’re not too cold, making your batter smooth and even. 

The Creaming Method

The creaming method, where you beat sugar and butter together until light and fluffy, is key for a well-risen cake. This process incorporates air into the batter, making your cake lighter. 

Use a Cold Bowl

When making frosting or whipped cream, chill your bowl and beaters in the freezer for about 15 minutes before use. This will allow it to whip up faster and increase its volume. 

Don’t Overmix

Once you’ve added flour to your mixture, be careful not to overmix. Overmixing can activate the gluten, making your cake dense and chewy. 

Use Parchment Paper

To avoid cakes sticking to the bottom of the pan, line your pans with parchment paper. This also gives a smoother bottom surface.
