This pasta recipe is simple but super tasty. It’s packed with veg and there’s excellent protein and omega 3 from the sardines. Using the oil from the sardine tin adds a rich, savory flavor. It pairs perfectly with the freshness of the cherry tomatoes and the basil leaves. This recipe can easily be doubled to serve a crowd.
Ingredients
(Serves 2)
- Pasta shape of your choice
- 1 tin sardines in oil
- 1 large red onion
- 2 cloves garlic
- 1 cup cherry tomatoes
- 1 zucchini
- ½ eggplant
- ½ cup fresh basil leaves
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Parmesan cheese, to serve
Instructions
- Chop the onion, garlic, zucchini, and eggplant.
- Cook the pasta according to the package instructions.
- In the meantime, heat some oil in a pan and add the onion, zucchini, and eggplant.
- Fry for 10 minutes and then add the garlic, paprika, oregano, salt, and pepper.
- Fry for another 5 minutes.
- Drain the pasta once cooked.
- To the pan, add the sardines and their oil, the tomatoes, and the pasta.
- Increase the heat slightly and cook for 5-10 minutes, stirring regularly.
- Tear the basil leaves into the pan and cook for another 5 minutes.
- Serve immediately with some grated parmesan.
