Tinned Sardine Pasta Recipe

This pasta recipe is simple but super tasty. It’s packed with veg and there’s excellent protein and omega 3 from the sardines. Using the oil from the sardine tin adds a rich, savory flavor. It pairs perfectly with the freshness of the cherry tomatoes and the basil leaves. This recipe can easily be doubled to serve a crowd.

Ingredients 

(Serves 2)

  • Pasta shape of your choice
  • 1 tin sardines in oil
  • 1 large red onion
  • 2 cloves garlic
  • 1 cup cherry tomatoes
  • 1 zucchini 
  • ½ eggplant 
  • ½ cup fresh basil leaves
  • 1 teaspoon smoked paprika 
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Parmesan cheese, to serve

Instructions

  1. Chop the onion, garlic, zucchini, and eggplant. 
  2. Cook the pasta according to the package instructions.
  3. In the meantime, heat some oil in a pan and add the onion, zucchini, and eggplant.
  4. Fry for 10 minutes and then add the garlic, paprika, oregano, salt, and pepper.
  5. Fry for another 5 minutes. 
  6. Drain the pasta once cooked.
  7. To the pan, add the sardines and their oil, the tomatoes, and the pasta.
  8. Increase the heat slightly and cook for 5-10 minutes, stirring regularly.
  9. Tear the basil leaves into the pan and cook for another 5 minutes.
  10. Serve immediately with some grated parmesan.
