  • 4 large russet potatoes, peeled and thinly sliced
  • 1/2 cup of unsalted butter, melted

  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon chopped fresh rosemary
  • Salt and black pepper, to taste
  • Grated Parmesan cheese (optional, for topping)
  • Chopped fresh parsley (optional, for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish or casserole dish with butter or cooking spray. In a small mixing bowl, combine the melted butter, minced garlic, fresh thyme leaves, chopped rosemary, salt, and black pepper. Stir well to create a flavorful herb butter mixture.
  2. Place a layer of thinly sliced potatoes in the bottom of the prepared baking dish, overlapping the slices slightly to create an even layer. Brush the layer of potatoes with a generous amount of the herb butter mixture, ensuring that each potato slice is coated with the flavorful mixture.
  3. Repeat the process, layering more thinly sliced potatoes on top of the first layer and brushing each layer with the herb butter mixture, until all the potatoes and butter mixture have been used. Aim for as many layers as possible to achieve the “million-layer” effect.
  4. Once all the potatoes are layered in the baking dish and coated with the herb butter mixture, cover the dish with aluminum foil. Place the covered baking dish in the preheated oven and bake for 45 minutes to 1 hour, or until the potatoes are tender when pierced with a fork.
  5. After the initial baking time, remove the aluminum foil from the baking dish. If desired, sprinkle the top of the potatoes with grated Parmesan cheese for added flavor and texture. Return the uncovered baking dish to the oven and continue baking for an additional 15-20 minutes, or until the top of the potatoes is golden brown and crispy.
  6. Once baked to perfection, remove the dish from the oven and let it cool slightly. Garnish the dish with chopped fresh parsley for a pop of color and freshness. Serve hot as a stunning side dish or appetizer.

As winter draws ever nearer, it’s the time of year to be making food that will provide comfort and warmth on a cold day. This hearty leek and potato soup will do just that and is delicious served with a crust of whole meal bread and butter.

Ingredients

  • 2 leeks
  • 3 cloves of garlic
  • 1lb of potatoes
  • 4 cups of vegetable stock
  • Flour
  • 1 cup of butter
  • Thyme
  • Salt
  • Black pepper
  • Single cream (optional)

Instructions

  1. Chop up your leeks into small cylinders and fry in your butter until soft. Next fry your crushed garlic. Add a bit of flour at this point to thicken your soup later down the line.
  2. Chop up your potatoes into small chunks and add them to your pan along with your cups of vegetable stock. Allow them to cook for 15 minutes and add salt and thyme at this point.
  3. Once the potatoes are cooked, use a hand blender to blend your soup until it is smooth. Add black pepper generously and salt if needed. You can remove the soup from the heat and add single cream if you want to.
  4. Serve with bread and enjoy!

When you aren’t quite sure what side dish to make for your next meal, keep this option in mind: the humble baked potato. While it isn’t the fanciest dinner side dish or the most elaborately prepared kitchen staple, there’s no denying that a well-made baked potato sure is good.

Though its preparation is simple, it’s important to follow a few tips if you want to make a great baked spud. Do these things, and you will be well on your way.

Choose a Starchy Potato

The first step to making a delicious baked potato is, well, picking the right potato! You’ll want to make a starchy choice, which allows for the potato’s structure to hold up after being baked. Russett potatoes are a great choice here.

Wash Well

Part of the experience of eating a baked potato is enjoying its vitamin and nutrient-rich skin after it has been prepared in the oven. However, be careful and wash the skin well before making it, as these underground-growing tubers might be quite dirty when you buy them.

Deliciously Cheesy Broccoli Stuffed Potatoes by @ItsAllGoodVegan 😋🥦🧀🥔 ⁣ .⁣ INGREDIENTS:⁣ Baked Potatoes🥔 ⁣ 8 medium russet potatoes, scrubbed and washed⁣ 1 tbsp avocado oil (or oil choice)⁣ 2 tsp sea salt⁣ .⁣ Broccoli🥦⁣ 2 cups broccoli, chopped into bite sized pieces⁣ 2 Tbsp filtered water⁣ .⁣ Cheese Sauce🧀⁣ 1/4 cup vegan butter⁣ ¼ cup all-purpose flour⁣ 1 cup plant milk⁣ 1 cup vegan cheddar cheese⁣ ½ tsp garlic powder⁣ 1/4 tsp black pepper⁣ ½ tsp apple cider vinegar⁣ .⁣ INSTRUCTIONS:⁣ 1. Preheat the oven to 400F / 204C. Pierce each potato 3 to 4 times with a fork. Using a brush cover your potatoes with a layer of oil and place them on a large baking pan with raised edges. If you don’t have a raised baking pan line your pan with foil so it can catch the oil drippings. Sprinkle the outsides of the potatoes with sea salt and bake for 20 minutes. Take out and flip, and bake for an additional 20 minutes. Bake for longer if you are using large potatoes.⁣ 2. Heat a pan on medium heat. Once hot, add the chopped broccoli and water. Cover pan with a lid and steam broccoli for 4-5 minutes or until the broccoli is tender. ⁣ 3. Heat a saucepan on medium heat. Once hot, add the butter and flour and whisk until a thick paste has been formed. Add the plant milk, vegan cheddar cheese, garlic powder, and black pepper to the saucepan. Constantly whisk for 4-5 minutes until the cheese melts. Once the cheese melts turn the stove top on low.⁣ 4. Make a medium slit on the top of the potato. Stuff it with the steamed broccoli and drizzle with the cheese sauce. Enjoy!

Poke Holes Before Baking

  4. Once all the potatoes are layered in the baking dish and coated with the herb butter mixture, cover the dish with aluminum foil. Place the covered baking dish in the preheated oven and bake for 45 minutes to 1 hour, or until the potatoes are tender when pierced with a fork.
  5. After the initial baking time, remove the aluminum foil from the baking dish. If desired, sprinkle the top of the potatoes with grated Parmesan cheese for added flavor and texture. Return the uncovered baking dish to the oven and continue baking for an additional 15-20 minutes, or until the top of the potatoes is golden brown and crispy.

As winter draws ever nearer, it’s the time of year to be making food that will provide comfort and warmth on a cold day. This hearty leek and potato soup will do just that and is delicious served with a crust of whole meal bread and butter.

Ingredients

  • 2 leeks
  • 3 cloves of garlic
  • 1lb of potatoes
  • 4 cups of vegetable stock
  • Flour
  • 1 cup of butter
  • Thyme
  • Salt
  • Black pepper
  • Single cream (optional)

Instructions

  1. Chop up your leeks into small cylinders and fry in your butter until soft. Next fry your crushed garlic. Add a bit of flour at this point to thicken your soup later down the line.
  2. Chop up your potatoes into small chunks and add them to your pan along with your cups of vegetable stock. Allow them to cook for 15 minutes and add salt and thyme at this point.
  3. Once the potatoes are cooked, use a hand blender to blend your soup until it is smooth. Add black pepper generously and salt if needed. You can remove the soup from the heat and add single cream if you want to.
  4. Serve with bread and enjoy!

Dry Well

When you aren’t quite sure what side dish to make for your next meal, keep this option in mind: the humble baked potato. While it isn’t the fanciest dinner side dish or the most elaborately prepared kitchen staple, there’s no denying that a well-made baked potato sure is good.

Though its preparation is simple, it’s important to follow a few tips if you want to make a great baked spud. Do these things, and you will be well on your way.

Choose a Starchy Potato

The first step to making a delicious baked potato is, well, picking the right potato! You’ll want to make a starchy choice, which allows for the potato’s structure to hold up after being baked. Russett potatoes are a great choice here.

Wash Well

Part of the experience of eating a baked potato is enjoying its vitamin and nutrient-rich skin after it has been prepared in the oven. However, be careful and wash the skin well before making it, as these underground-growing tubers might be quite dirty when you buy them.

Deliciously Cheesy Broccoli Stuffed Potatoes by @ItsAllGoodVegan 😋🥦🧀🥔 ⁣ .⁣ INGREDIENTS:⁣ Baked Potatoes🥔 ⁣ 8 medium russet potatoes, scrubbed and washed⁣ 1 tbsp avocado oil (or oil choice)⁣ 2 tsp sea salt⁣ .⁣ Broccoli🥦⁣ 2 cups broccoli, chopped into bite sized pieces⁣ 2 Tbsp filtered water⁣ .⁣ Cheese Sauce🧀⁣ 1/4 cup vegan butter⁣ ¼ cup all-purpose flour⁣ 1 cup plant milk⁣ 1 cup vegan cheddar cheese⁣ ½ tsp garlic powder⁣ 1/4 tsp black pepper⁣ ½ tsp apple cider vinegar⁣ .⁣ INSTRUCTIONS:⁣ 1. Preheat the oven to 400F / 204C. Pierce each potato 3 to 4 times with a fork. Using a brush cover your potatoes with a layer of oil and place them on a large baking pan with raised edges. If you don’t have a raised baking pan line your pan with foil so it can catch the oil drippings. Sprinkle the outsides of the potatoes with sea salt and bake for 20 minutes. Take out and flip, and bake for an additional 20 minutes. Bake for longer if you are using large potatoes.⁣ 2. Heat a pan on medium heat. Once hot, add the chopped broccoli and water. Cover pan with a lid and steam broccoli for 4-5 minutes or until the broccoli is tender. ⁣ 3. Heat a saucepan on medium heat. Once hot, add the butter and flour and whisk until a thick paste has been formed. Add the plant milk, vegan cheddar cheese, garlic powder, and black pepper to the saucepan. Constantly whisk for 4-5 minutes until the cheese melts. Once the cheese melts turn the stove top on low.⁣ 4. Make a medium slit on the top of the potato. Stuff it with the steamed broccoli and drizzle with the cheese sauce. Enjoy!

Poke Holes Before Baking

Finally, don’t make a tragic mistake and forget to poke holes in your potato before sticking it in the oven! Why? Well, it’s possible for the heat and moisture inside of the potato to build up and explode without poking escape holes in the spud. That’s definitely a kitchen faux pas!
