Sometimes, making a quick, nutritious, yet delicious meal sounds like an impossible challenge, especially when you’re short on time. Fortunately, this doesn’t have to be the case. Here is how you can make a quick, easy, and scrumptious shaved carrot salad.

Ingredients:

  • 6 medium carrots
  • 1/2 teaspoon salt
  • 1/2 cup sliced scallions
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame seeds
  • 1 small clove garlic
  • 3 tablespoons tahini
  • 3 tablespoons olive oil
  • 3 tablespoons rice vinegar
  • 2 teaspoons ginger

Instructions:

  1. In a medium bowl, whisk together ginger, soy sauce, garlic, vinegar, olive oil, and salt. Once combined, add a tablespoon of cold water and whisk together.
  2. Shave the carrots and then chop the remaining carrots into matchsticks.

There’s a lot to love about tacos—they’re tasty, filling, and totally customizable, but when it comes to convenience, they tend to miss the mark. After all, who among us hasn’t taken a bite into a hard shell taco, only for it to break and send the contents spilling out everywhere? It’s much easier to just toss all of the ingredients together in the first place, and this is where taco salads come in. Here’s how we make ours:

Ingredients:

For the Salad:

  • 1 cup shredded iceberg lettuce
  • 1/2 cup cooked and seasoned ground beef (or vegan meat substitute)
  • 1/4 cup black beans, drained and rinsed
  • 1/4 cup corn kernels
  • 1/4 cup tomato, diced
  • 1/4 cup Cotija cheese, crumbled
  • 1/4 cup sliced black olives
  • 1/4 cup red onion, diced
  • 1/4 cup avocado, diced
  • 1/4 cup salsa
  • 1/4 cup sour cream
  • Tortilla chips, for crunch

For the Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the shredded lettuce, cooked ground beef/meat substitute, black beans, corn, tomatoes, Cotija cheese, black olives, red onions, and avocado.
  2. In a small bowl, prepare the dressing by whisking together the olive oil, lime juice, ground cumin, chili powder, salt, and pepper. Adjust the seasoning to taste.
  3. Pour the dressing over the salad mixture and toss everything together until well combined.
  4. Transfer the tossed salad to a serving plate or bowl.
  5. Drizzle salsa and sour cream over the salad.
  6. Sprinkle some crushed tortilla chips on top for added crunch just before serving.

Ingredients

  • Salt
  • 1 large lemon
  • 2 15-ounce cans of black-eyed peas
  • 6 ounces bacon, sliced thick
  • olive oil
  • 1 bunch of collard greens
  • 12 ounces cherry tomatoes
  • 1/4 cup apple cider vinegar
  • 12 ounces cauliflower rice

Instructions

  1. Warm a wide saucepan over medium-high heat, tossing in cauliflower rice and olive oil. Begin to stir and add a dash of salt. After about 3 minutes, once the rice has softened, turn off the heat and set the mixture aside to cool.
  2. Chop up the collard greens and put them in a large bowl. Sprinkle a dash of salt and add all of the vinegar and some lemon juice.
  3. Slice up the tomatoes and throw them into the salad. Then, cut the bacon into bite-sized pieces before adding as well.
  4. Drain and rinse the black-eyed peas before adding them to the mix along with the cauliflower rice. Stir the salad until everything is completely mixed up.

Ingredients

To make this salad sublime, you need the right ingredients. Similar to a Greek salad, it’s based around feta cheese, kalamata olives, tomatoes, lemon juice, and olive oil. However, you will also need some avocado, kidney beans, red onion, and spinach.

Proper Preparation

The convenient thing about making salads like this one is that they’re really quick and easy to make. Once you have the right ingredients, it’s mostly a matter of throwing the ingredients together correctly.

Firstly, prepare a bed of lettuce on your plate. Then, you must chop your red onion into long strands rather than little pieces, which makes for a much better aesthetic. Chop your avocado into thin slices when it’s ripe and soft, and when you’re done, and them both to your plate.

Ingredients

  • Salt
  • 1 large lemon
  • 2 15-ounce cans of black-eyed peas
  • 6 ounces bacon, sliced thick
  • olive oil
  • 1 bunch of collard greens
  • 12 ounces cherry tomatoes
  • 1/4 cup apple cider vinegar
  • 12 ounces cauliflower rice

Instructions

  1. Warm a wide saucepan over medium-high heat, tossing in cauliflower rice and olive oil. Begin to stir and add a dash of salt. After about 3 minutes, once the rice has softened, turn off the heat and set the mixture aside to cool.
  2. Chop up the collard greens and put them in a large bowl. Sprinkle a dash of salt and add all of the vinegar and some lemon juice.
  3. Slice up the tomatoes and throw them into the salad. Then, cut the bacon into bite-sized pieces before adding as well.
  4. Drain and rinse the black-eyed peas before adding them to the mix along with the cauliflower rice. Stir the salad until everything is completely mixed up.

To make this salad sublime, you need the right ingredients. Similar to a Greek salad, it’s based around feta cheese, kalamata olives, tomatoes, lemon juice, and olive oil. However, you will also need some avocado, kidney beans, red onion, and spinach.
