Ingredients
- Salt
- 1 large lemon
- 2 15-ounce cans of black-eyed peas
- 6 ounces bacon, sliced thick
- olive oil
- 1 bunch of collard greens
- 12 ounces cherry tomatoes
- 1/4 cup apple cider vinegar
- 12 ounces cauliflower rice
Instructions
- Warm a wide saucepan over medium-high heat, tossing in cauliflower rice and olive oil. Begin to stir and add a dash of salt. After about 3 minutes, once the rice has softened, turn off the heat and set the mixture aside to cool.
- Chop up the collard greens and put them in a large bowl. Sprinkle a dash of salt and add all of the vinegar and some lemon juice.
- Slice up the tomatoes and throw them into the salad. Then, cut the bacon into bite-sized pieces before adding as well.
- Drain and rinse the black-eyed peas before adding them to the mix along with the cauliflower rice. Stir the salad until everything is completely mixed up.
