These  Quick Vegan Oat Bars Are Just What You Need For Breakfast

Oatmeal is one of the best foods to eat in the morning. The reason for this is because the oats leave you feeling fuller for longer, and they also help regulate your blood sugar so you feel more awake! If you want all these benefits but want them on the go, these bars are for you!

Ingredients

The base for these bars are actually only 2 ingredients; oats and ripe bananas. However, you can add as many ingredients as you want, like dried fruits, nuts, cocoa nibs, protein powder, or whatever you think of!

Instructions

  1. Mash-up 2 ripe bananas into a puree consistency. The riper the better for this recipe.
  2. Add in a bit of cinnamon, nutmeg, and salt.
  3. Add ¼ cup of oats at a time and mix together with the bananas. You want to have a consistency that is wet enough to hold together in a shape but not too dry that they fall apart, so keep adding oats until you get to this consistency.
  4. Add in an extra ingredients you want and mix well.
  5. Form the mixture into squares or circles on a parchment like baking sheet.
  6. Bake at 350F for about 10 minutes until they become golden brown.
  7. Enjoy!
