This Eggplant Dip is Ideal For Hosting

Ingredients:

  • 1 tablespoon tomato paste
  • 2 cloves minced garlic
  • 1 medium eggplant, peeled and cut into 1-inch cubes
  • 1 tablespoon red wine vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon sugar
  • 2 red bell peppers, seeded and cut into 1-inch cubes
  • 1/4 teaspoon crushed red pepper flakes
  • 1 red onion, peeled and cut into 1-inch pieces
  • 1 tablespoon fresh lemon juice from 1 lemon
  • salt
  • freshly ground black pepper

Instructions:

  1. Set the oven to 400 degrees and prepare a baking sheet with cooking spray or parchment paper.
  2. Mix the red bell pepper, eggplant, thyme, onion, and garlic.
  3. Top them off with 1/2 teaspoon pepper, olive oil, and 1 teaspoon salt. Mix all the ingredients well together.
  4. Transfer the mix to the baking sheet and place it in the oven. Cook for 45 minutes until you notice that the vegetables are soft.
  5. Make sure that you mix the vegetables after 20 minutes.
  6. When they’re done, take the baking sheet out and wait for 5 minutes.
  7. Next, add the baked vegetables to a blender or food processor. Include the tomato paste and start blending.
  8. You need to get a creamy consistency.
  9. When the eggplant dip is done, add red wine vinegar, lemon juice, red pepper flakes, sugar, and mix.
