Ingredients:
- 1 tablespoon tomato paste
- 2 cloves minced garlic
- 1 medium eggplant, peeled and cut into 1-inch cubes
- 1 tablespoon red wine vinegar
- 3 tablespoons olive oil
- 1 tablespoon chopped fresh thyme
- 1 teaspoon sugar
- 2 red bell peppers, seeded and cut into 1-inch cubes
- 1/4 teaspoon crushed red pepper flakes
- 1 red onion, peeled and cut into 1-inch pieces
- 1 tablespoon fresh lemon juice from 1 lemon
- salt
- freshly ground black pepper
Instructions:
- Set the oven to 400 degrees and prepare a baking sheet with cooking spray or parchment paper.
- Mix the red bell pepper, eggplant, thyme, onion, and garlic.
- Top them off with 1/2 teaspoon pepper, olive oil, and 1 teaspoon salt. Mix all the ingredients well together.
- Transfer the mix to the baking sheet and place it in the oven. Cook for 45 minutes until you notice that the vegetables are soft.
- Make sure that you mix the vegetables after 20 minutes.
- When they’re done, take the baking sheet out and wait for 5 minutes.
- Next, add the baked vegetables to a blender or food processor. Include the tomato paste and start blending.
- You need to get a creamy consistency.
- When the eggplant dip is done, add red wine vinegar, lemon juice, red pepper flakes, sugar, and mix.
