Rutabaga, or swede as it’s known in some parts of the world, is one of the lesser known root vegetables. It has a similar texture to other root vegetables like sweet potatoes, but it has a lovely mild sweet flavor that is really versatile. If you’re looking to diversify your winter palette, try one of these rutabaga recipes.

Vegetable Soup

Rutabaga is a great addition to your simple vegetable soup, and you hardly have to do anything to it to make it stand out. Chop up whatever root vegetables you have on hand, like carrots, sweet potatoes, and rutabaga. Cut them in similar sizes so they cook evenly. Boil them in vegetable broth with herbs like thyme and rosemary until they are soft. Serve with fresh parsley on top and bread.

Rutabaga Mash

Instead of turning to potatoes for comfort food, make rutabaga mash! All you have to do is chop them into cubes, boil them until tender, and mash them with butter or milk. The great thing about a rutabaga mash is that the texture won’t change if you mash them too long, and you can even put them in the food processor for a smoother consistency.
