This Lemon Drizzle Cake is to Die For

This popular cake is sweet and tart and makes for the perfect afternoon snack. Using lemon juice in the mixture not only gives that delicious, fresh citrus taste but also ensures the cake will be moist and dense. The icing is super easy to make and gives this satisfying cake a lovely finish that tastes as good as it looks.

Ingredients:

  • 2 cups plain flour
  • 1 teaspoon baking powder
  • 1 cup caster sugar
  • Juice of 3 lemons 
  • 2 eggs 
  • ¼ cup salted butter 

For the Icing:

  • Juice of 1 lemon
  • 2 tablespoons water
  • ¾ cup icing sugar

Instructions:

  1. Preheat the oven to 350℉
  2. Line a cake tin with some greaseproof paper
  3. Sift the flour and baking powder into a large mixing bowl
  4. Add the sugar and the butter and mix until smooth
  5. Crack the eggs into the bowl and pour in the lemon juice
  6. Whisk the mixture together until everything is well combined
  7. Transfer the mixture to the cake tin and place in the oven for 25-30 minutes
  8. Meanwhile, place the icing sugar in a bowl and gradually add the lemon juice, stirring each time until it becomes runny and sticky
  9. Use water if the lemon juice runs out 
  10. Once cooked, leave the cake to cool for 15-20 minutes
  11. Then pour the icing over ensuring the whole cake is covered in the glaze
  12. Leave to set for 5-10 minutes and then enjoy
