This Protein Rich Breakfast Will Keep You Full All Morning

Perhaps you’re not a breakfast person, but if you are, you may find that a standard bowl of cereal or piece of toast does little to stave off hunger pangs come mid-morning. If you’d like a breakfast that’s a little more substantial and filling, check out this simple, quick, protein rich recipe which should keep you satisfied up until lunch.

Ingredients (to serve 1):

  • 2 eggs
  • 2 tablespoons of natural yogurt
  • 1/4 cup of grated cheese
  • 1/2 cup of spinach
  • 1 tablespoon of oil
  • 2 tablespoons of pumpkin seeds
  • A small handful of cherry tomatoes

Instructions:

  1. In a small bowl, whisk the eggs together, seasoning with a little salt and pepper if you like.
  2. Whisk in the yogurt and cheese into the eggs, and then stir in the spinach.
  3. Heat the oil in a pan, pour in the omelet mix and give it 1 – 2 minutes to cook on one side.
  4. When it’s ready, flip the omelet and cook it on the other side.
  5. Once cooked, scatter over the tomatoes and seeds and enjoy.

The eggs, cheese, yogurt and seeds are all great sources of filling protein and healthy fats, so enjoy this omelet on a busy work day when you know you won’t have time for a mid-morning snack.
