This Slow Cooker Chicken Recipe Couldn’t Be Easier

Everyone who has a slow cooker knows that it can oftentimes be your best friend in the kitchen; all you need to do is dump a bunch of ingredients into it, turn it on, and by the end of the day, you have an incredible meal. If you are thinking about purchasing one or if you have one and you need some new inspiration, make this chicken dish for dinner tonight! There is almost no prep beforehand, and it can feed at least 4-6 people.

The only prep for this dish is essentially seasoning. Use salt and pepper to season both sides of your chicken whatever cut you get. Depending on what potatoes you get, you might have to cut them in half or more to make them cook evenly and quicker. If you are using small new potatoes and smaller red potatoes, you can leave them whole. You can also cut up carrots or buy baby carrots to save you time.

Method

  1. Place the potatoes and carrots at the bottom of the slow cooker and season with salt and pepper.
  2. Then, put down herbs like rosemary and thyme, place the chicken on top of that, and top with lemon slices.
  3. Turn it on high for 4 hours of low for 8 and you’re done!
