This Vegan Lasagna is Amazing

Vegan lasagna is a hearty, flavorful dish that satisfies cravings while being completely plant-based. Follow this recipe to create an amazing vegan lasagna at home.

Ingredients:

  • 12 lasagna noodles
  • 2 cups of marinara sauce
  • 1 cup of vegan ricotta cheese
  • 2 cups of fresh spinach, chopped
  • 1 cup of mushrooms, sliced
  • 1 zucchini, thinly sliced
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 cups vegan mozzarella cheese, shredded
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until translucent. Add the mushrooms, zucchini, and bell pepper, cooking until tender. Stir in the spinach and cook until wilted. Season with salt, pepper, dried basil, and oregano.
  3. Preheat your oven to 375°F (190°C). Spread a thin layer of marinara sauce on the bottom of a 9×13-inch baking dish. Layer 4 lasagna noodles over the sauce. Spread half of the vegan ricotta cheese over the noodles, followed by half of the vegetable mixture and 1/3 of the vegan mozzarella cheese. Repeat the layers, ending with a final layer of noodles topped with the remaining marinara sauce and mozzarella cheese.
  4. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  5. Let the lasagna cool for a few minutes before slicing. Serve hot and enjoy the amazing flavors of this vegan lasagna.
