Aglio e Olio is a classic Italian pasta dish known for its simplicity and robust flavors. Follow this recipe to enjoy a delightful meal that’s ready in minutes.

Ingredients:

  • 12 ounces of spaghetti
  • 1/2 cup extra virgin olive oil
  • 6 cloves garlic, thinly sliced
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Freshly ground black pepper
  • Grated Parmesan cheese for serving (optional)
  • Lemon zest (optional)

Instructions:

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes. Cook until the garlic is golden and fragrant, about 2-3 minutes, being careful not to burn the garlic.
  3. Add the drained pasta to the skillet, tossing to coat it in the garlic and oil mixture. If the pasta seems dry, add a splash of the reserved pasta water to achieve the desired consistency.
  4. Stir in the chopped parsley and season with salt and freshly ground black pepper to taste. Toss well to combine.
  5. Transfer the pasta to serving plates. Top with grated Parmesan cheese and a sprinkle of lemon zest, if desired, for an extra burst of flavor.
