Aglio e Olio is a classic Italian pasta dish known for its simplicity and robust flavors. Follow this recipe to enjoy a delightful meal that’s ready in minutes.
Ingredients:
- 12 ounces of spaghetti
- 1/2 cup extra virgin olive oil
- 6 cloves garlic, thinly sliced
- 1/4 teaspoon red pepper flakes
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Freshly ground black pepper
- Grated Parmesan cheese for serving (optional)
- Lemon zest (optional)
Instructions:
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes. Cook until the garlic is golden and fragrant, about 2-3 minutes, being careful not to burn the garlic.
- Add the drained pasta to the skillet, tossing to coat it in the garlic and oil mixture. If the pasta seems dry, add a splash of the reserved pasta water to achieve the desired consistency.
- Stir in the chopped parsley and season with salt and freshly ground black pepper to taste. Toss well to combine.
- Transfer the pasta to serving plates. Top with grated Parmesan cheese and a sprinkle of lemon zest, if desired, for an extra burst of flavor.
