Chilaquiles Are A Vegan Mexican Comfort Food!

Some people say that chilaquiles is the ultimate Mexican comfort food. You can eat them for breakfast, lunch, or dinner, and they’re great to make if you have tortillas that are going stale. It’s super easy to throw together and full of flavor, and best of all, vegan! Although you can add an egg or cheese at the end, the actual recipe is meat and dairy free. Essentially all it is is tortilla chips cooked in a sauce, but once you taste it, you’ll know it’s more than just that simple.

Instructions

  1. If you don’t have stale corn tortillas, dry them out by slicing them into triangles and heating them in the oven with a little bit of olive oil just until they are a light brown.
  2. If your tortillas are dry or stale, you can just cut them into triangles and leave them to the side.
  3. Start heating up your favorite enchilada sauce, chili sauce, or salsa, in a pan.
  4. Add in the cut tortillas and toss them in the sauce until they have softened a bit, but are not too soggy.
  5. Take them off the heat and put them on a plate.
  6. Serve with anything from fresh salsa, to nopales, or if you are vegetarian, a fried egg and queso fresco.
