How to Make Greek Avgolemono Soup

Avgolemono Soup is one that every Greek family knows. It is easy to make and uses pretty basic ingredients and with the help of chicken breast and rice, it constitutes a whole meal. The lemony taste is just irresistible.

Ingredients

  • 1 chicken breast
  • 1 finely chopped yellow onion
  • 5 cups of chicken stock
  • 1/3 cup white rice
  • 3 egg yolks
  • 1/4 cup of fresh lemon juice
  • 6 tablespoons extra virgin oil
  • Salt and pepper

Instructions

  1. Heat 3 tablespoons of olive oil in a pan and add the chicken breast. Pan-fry the chicken for approx. 3-4 minutes on each side, remove and place on a plate.
  2. In a large soup pot, add 3 tablespoons of olive oil and add the chopped onion. Fry the onion until it becomes clear and add the rice. Stir for one minute.
  3. Add the chicken stock to the pot and season with salt and pepper.
  4. In a small bowl, mix the egg yolks and the lemon juice. Slowly add one ladle of soup into the mixture and stir constantly. The idea here is to warm the yolks and lemon juice mixture without cooking the egg. Add another ladle of soup and stir. Continue to do so until the mixture is warm.
  5. Add the mixture into the pot and bring almost to boil.
  6. Chop the chicken breast into fine pieces and add to the pot. When warm, pour into serving dishes and enjoy.
