This Vegetarian Gravy Will Knock Your Socks Off

Gravy is often the centerpiece of a good roast dinner, and it can be the best part of sausage and mash. This vegetarian alternative will more than make up for the lack of animal stock and impress anyone you serve it to.

Ingredients

  • 1 leek
  • 10oz of mushrooms
  • 1 onion
  • 1 cup of butter
  • ½ cup of flour
  • 4 cloves of garlics
  • 1 vegetable stock cube
  • 4 cups of water
  • 2 tablespoons of gravy granules
  • 1 teaspoon of marmite
  • Red wine

Instructions

  1. Fry your leeks and onions in your butter in a saucepan on a low heat for about 15 minutes with the lid on. After they are soft and translucent, you can add your finely chopped mushrooms. Cook these for about 10 minutes still on a low heat. Add your flow and mix in with your vegetables.  
  2. Add your crushed garlic into the mix. Gradually add your vegetable stock cube and water. Stir in your gravy granules and marmite.
  3. Blend your gravy with a hand blender if you like it smooth, if not you can just leave it as it is.
  4. Add a decent splash of red wine and ideally let it simmer on a low heat for at least 10 minutes. Now it’s ready to serve.
