Eggs are a simple, classic, go-to food for breakfast and beyond, but cooking them can be surprisingly challenging and require a lot of technique if you want the best possible results. So here are some chef secrets that will help you make different styles of eggs as successfully as possible.

Scrambled

Using a saucepan instead of a frying pan on medium-low heat will assure that your eggs cook evenly, as the heavier bottom of the pan has even heat, and keeping it from getting too hot will give you enough time for nice curds to form in your scrambled eggs. Adding some creme fraiche at the end of the process can add a delectable tang and creaminess.

Poached

Poached eggs are a little bit more ambitious, but you can totally pull it off. Just remember to use vinegar in your water, crack the egg into a bowl first instead of directly into the water, and ease the egg carefully into the simmering water instead of just dumping it right in.

Fried

To prevent your fried eggs from sticking, you can either use a non-stick pan or a regular pan with a layer of very, very hot oil in the bottom. Higher heat will also keep it nice and crispy.
