Croissants are a notoriously tricky pastry to make. They require a process called laminating, which is what creates the fluffy layers. However, it’s very fussy, requiring precise temperatures and lots and lots of rolling out dough. If you’re a baker, this one is a great way to test your skills.

Paella

Similar to risotto, paella is one of those rice dishes that enhances all of the trickiness that is characteristic of cooking rice. You need just the right type of rice and just the right amount of liquid to get a result that is both crunchy on the exterior and tender on the interior.

Souffle

A deflating souffle may be a sitcom cliche, but it’s also a real problem that plagues chefs and bakers around the world. For a souffle to go right you have to have a pro’s touch with eggs, as it requires a perfectly separated egg and egg whites whipped at just the right level.
