Quick and Easy Chipotle Bowls at Home

Ingredients:

  • Cooked rice (white or brown). For a quick option try Trader Joe’s microwaved rice! it’s delicious and done in 3 minutes
  • Protein (chicken, steak, or tofu)
  • Black beans or pinto
  • Sautéed bell peppers and onions
  • Corn salsa (corn, red onion, lime juice, and cilantro)
  • Pico de gallo (diced tomatoes, cilantro, lime, and salt)
  • Guacamole or sliced avocado
  • Optional Garnishes (cilantro, cheese, sour cream, or lime wedges)
  • Hot sauce of choice to taste

Instructions:

  1. Prepare your base. Start with a serving of cooked rice or lettuce if you’re looking for a Keto alternative.
  2. Sauté or bake your protein with a chipotle lime spice blend, and drizzle with lime juice and fresh cilantro.
  3. Heat up your beans, and mix them in with your rice for a complete protein.
