Try This Delicious Spinach, Scallion And Cheddar Omelet

An omelet is a very versatile dish that can be hard to get right. Here is an omelet that will hit the spot without being too complicated.

Ingredients

  • 4 eggs
  • 8oz of spinach
  • 6oz of cheddar
  • 3 scallions
  • 1 oz butter
  • Salt
  • Black pepper

Instructions

  1. Heat the butter in a wide and shallow pan. This is the best type of pan for making an omelet as it will cook more quickly and avoid drying out. Add the spinach and cook until mostly wilted.
  2. Meanwhile, beat your eggs in a bowl. Add to the pan when it is very hot and shake pan and stir occasionally to stop it sticking.
  3. Chop up your scallions and add to the pan along with your grated cheese.
  4. Salt to taste and add a generous dose of black pepper.
