Try This Easy Mediterranean Vegan Salad

Ingredients

  • Tomato
  • Cucumber
  • Bell pepper (red or yellow)
  • Red onion
  • Can of chickpeas
  • Olive oil
  • Lemon
  • Salt

Instructions

  • Chop all the vegetables into small, bite-size pieces.
  • Open the can of chickpeas. Drain and rinse the chickpeas.
  • In a large bowl, combine tomatoes, cucumber, bell pepper, red onion, and chickpeas. Mix well.
  • Dress with olive oil, lemon, and salt to taste. Stir to combine until the salad is well-covered.
