Make a satisfying but fresh-tasting dinner with this roasted sea bass dish that is sophisticated but simple. The succulent sea bass, infused with a tasty blend of herbs and citrus, goes very well with bread or potatoes. Here’s the recipe for you to follow.

Ingredients

  • 2 whole sea bass
  • 1 lemon
  • 4 cloves of garlic
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons fresh rosemary
  • 1/4 cup of extra-virgin olive oil
  • Salt
  • Black pepper
  • Lemon wedges (for serving)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper.
  2. Make diagonal cuts on both sides of each sea bass, to ensure the flavors you add will penetrate the fish. In a small bowl, mix minced garlic, fresh thyme, chopped rosemary, olive oil, salt, and black pepper to create a fragrant herb-infused marinade.
  3. Rub the marinade generously over each sea bass, making sure to get into the cuts for maximum flavor. Place lemon slices inside the cavity of each fish, adding a burst of citrusy goodness.
  4. Lay the marinated sea bass in the prepared baking dish and roast in the preheated oven for 20-25 minutes or until the flesh flakes easily with a fork.
  5. Once roasted, transfer the sea bass to a serving platter. Garnish with fresh parsley and serve with lemon wedges on the side. This will be delicious with new potatoes and tenderstem broccoli, or with bread to dip in. Enjoy!
