This egg-fried rice recipe combines the simplicity of everyday ingredients with a burst of irresistible flavors. Perfect for busy evenings or when you’re craving a quick and satisfying meal, this dish transforms humble ingredients into a fantastic meal. Follow these easy steps to whip up a comforting bowl of homemade egg-fried rice in no time.

Ingredients:

  • 2 cups of cooked and cooled jasmine rice (ideally a day old)
  • 2 tablespoons vegetable oil
  • 3 eggs
  • 1 cup of mixed vegetables (peas, carrots, corn, and chopped green onions)
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • Salt and pepper to taste
  • Sesame seeds and additional chopped green onions for garnish

Instructions:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the mixed vegetables and stir-fry until they are tender-crisp. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
  2. Combine the cooked rice with the vegetables and eggs in the skillet. Stir well to mix. Drizzle soy sauce and sesame oil over the rice mixture. Add garlic powder, ginger powder, salt, and pepper. Stir continuously to evenly coat the rice and vegetables with the seasonings.
