Watermelon Mojitos are the Cocktail You’ve Been Waiting for All Summer

Watermelon is the unofficial fruit of the summer and that means we want to put it in everything. While it may not go that well in a pasta, trust us when we say that watermelon mojitos are the business!

Ingredients:

  • 2 thick slices fresh watermelon
  • 6 ounces light rum
  • ¼ cup simple syrup
  • 3 limes, juiced
  • 15 fresh mint leaves, coarsely torn by hand

Instructions:

  1. Cut the watermelon into cubes and place in a food processor. Purée until smooth. 
  2. Use a mortar and pestle to mash the mint leaves and put them in a pitcher.
  3. Add the puréed watermelon, rum, syrup, and lime juice. 
  4. Serve over ice and garnish with extra mint leaves.
