Read any crepe recipe and it will tell you that your job is to make a batter using the listed ingredients. The good news is that you don’t have to follow any particular order, as long as the ingredients are mixed together well. But if you’re interested in making better crepes, consider separating the egg white from the yolk.
Separate the egg whites in a large bowl and mix the rest of the ingredients as usual. Using an electric whisk, create egg white foam which you will gently mix into the batter with a silicone spatula. This will make them fluffy and very soft.
Fry the crepes as usual and serve with favorite fillings. The great thing about crepes is that they can be sweet or savory, so play with the fillings until you find your perfect combination.
