Yummy Gingerbread Cookie Recipe

Just because the holiday season is coming to an end doesn’t mean the rest of the winter you need to be deprived of holiday goodness! Things like these gingerbread cookies should be enjoyed all throughout the cold months, so if you’re missing some holiday cheer, bake these cookies and get back in the spirit.

Instructions

  1. In a bowl, mix together the dry ingredients for the cookies. The ingredients are 3 cups all-purpose flour, 2 teaspoons ground ginger, 1 teaspoon cinnamon, 1 teaspoon baking soda, 1/4 teaspoon nutmeg and salt in a bowl.
  2. In another bowl, beat 3/4 cup unsalted butter with 3/4 packed brown sugar with an electric mixer.
  3. When the mixture is light and fluffy, add in one egg, 1 teaspoon vanilla extract and 1/2 cup of molasses.
  4. Once everything is well combined, slowly add in the dry mixture a little bit at a time on low speed.
  5. Shape the dough into a flat disk and refrigerate for 4 hours or overnight.
  6. After it’s chilled, roll the dough out until it’s 1/4 inch thick.
  7. Either use a cookie cutter or a glass and cut out whatever shapes you want the cookies to be.
  8. Set them 1 inch apart on a baking sheet and bake at 350F for 8-10 minutes.
  9. Allow them to cool and enjoy!
