Salads are an easy way to get your fruits and vegetables in for the day, but they can often get monotonous if you use the same recipes too often. Luckily, it is super easy to make an awesome salad that is exciting but still does not need a lot of ingredients If you want to try something new, look at these recipes for inspiration.

Israeli Salad

This chopped salad is super crispy, light, and acidic, and matches well with Middle Eastern and Mediterranean foods. The trick to getting this salad right is to dice the vegetables really small, which gives it that signature look. The two-star ingredients are tomatoes and cucumbers, with the addition of freshly chopped parsley. If you want to doctor it up, add in some red onion as well!

Roasted Squash Salad

Adding in a roasted vegetable into a salad is a fun way to jazz up your normal salads. For this recipe, all you need to do is cut delicata squash into rings, season it with salt and pepper, and roast it at 425F for about 30 minutes. Add that to a bed of arugula along with some dried fruit and you have a sweet, peppery, and soft salad to enjoy.
