It’s always hard to measure the right amount of rice to cook. So next time you’re cooking rice, go ahead and make a larger portion. The leftovers can be transformed into new dishes with just a few simple steps. Here are three great ideas.

Rice Porridge

Rice Porridge is a staple in many Asian countries. With a variety of topping options, you can easily make it your own. Combine rice with water or broth in a pot. Boil, then simmer, stirring occasionally to prevent sticking. Cook until creamy (30-60 minutes). Season with salt and add your favorite toppings.

Fried Rice

Transform leftover rice into a quick, flavorful meal with fried rice. It’s great for incorporating any leftover vegetables and proteins. Heat oil in a pan. Sauté garlic until fragrant. Add vegetables and proteins and cook until nearly done. Scramble eggs on one side of the pan. Stir in rice, breaking clumps, and mix well. Season with soy sauce, salt, and pepper. Cook until heated through and garnish with green onions.

Rice Fritters

Create crispy, delicious fritters from leftover rice for a satisfying snack, appetizer, or side. Mix rice, eggs, cheese, flour, herbs, salt, and pepper. Heat oil in a pan. Form mixture into small patties and fry each one until golden and crispy.
