Ingredients
For the Dumplings
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup milk
- 2 tbsp melted butter
For the Filling
- 2 cups cooked, shredded chicken
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1/2 cup finely chopped celery
- 1/2 cup finely chopped carrot
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
For the Broth
- Unless you want to make your own: 4 cups of chicken broth
- 1 cup water
- Salt and pepper to taste
Instructions
- In a bowl, mix flour, baking powder, and salt. Add milk and melted butter to form a soft dough. Set aside.
- In another bowl, combine the chicken, onion, celery, carrot, garlic, thyme, parsley, salt, and pepper.
- In a large pot, bring the chicken broth and water to a boil. Season with salt and pepper.
- Divide the dough into small portions. Flatten each piece and spoon a small amount of filling into the center. Seal the edges and gently drop the dumplings into the simmering broth. Cover and cook for 15-20 minutes.
