Loaded Spaghetti Squash Bowls

If you’re looking for a fun alternative to traditional spaghetti, any kind of squash is a great idea. Spaghetti squash is not only a lighter healthy alternative to traditional pasta, it’s also full of flavor. Here’s an easy recipe to try at home. 

Ingredients

  • 2 medium spaghetti squashes
  • Olive oil
  • Salt and pepper
  • 1 cup marinara sauce
  • 1 cup cooked and crumbled ground turkey or beef (vegetarian option: sautéed mushrooms)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish
  • Optional toppings: sautéed vegetables, olives, red pepper flakes

Instructions

  1. Preheat your oven to 400°F. Cut the spaghetti squashes in half lengthwise and scoop out the seeds. Drizzle the insides with olive oil and season with salt and pepper. Place them cut-side down on a baking sheet and roast for about 40 minutes.
  2. Once cool enough to handle, use a fork to shred the inside of the squash, creating spaghetti-like strands. Leave the strands in the shell. Spoon marinara sauce over each half, followed by the cooked meat or vegetables. Top with mozzarella and Parmesan cheese.
  3. Return the loaded squash halves to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  4. Garnish with fresh basil and serve hot.
