Ingredients
- 2 medium spaghetti squashes
- Olive oil
- Salt and pepper
- 1 cup marinara sauce
- 1 cup cooked and crumbled ground turkey or beef (vegetarian option: sautéed mushrooms)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil for garnish
- Optional toppings: sautéed vegetables, olives, red pepper flakes
Instructions
- Preheat your oven to 400°F. Cut the spaghetti squashes in half lengthwise and scoop out the seeds. Drizzle the insides with olive oil and season with salt and pepper. Place them cut-side down on a baking sheet and roast for about 40 minutes.
- Once cool enough to handle, use a fork to shred the inside of the squash, creating spaghetti-like strands. Leave the strands in the shell. Spoon marinara sauce over each half, followed by the cooked meat or vegetables. Top with mozzarella and Parmesan cheese.
- Return the loaded squash halves to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil and serve hot.
